{"id":3037,"date":"2025-03-22T11:37:17","date_gmt":"2025-03-22T02:37:17","guid":{"rendered":"https:\/\/keiko-okami.com\/?p=3037"},"modified":"2025-03-22T20:09:07","modified_gmt":"2025-03-22T11:09:07","slug":"what-kind-of-place-is-uonobu","status":"publish","type":"post","link":"https:\/\/keiko-okami.com\/en\/blog\/what-kind-of-place-is-uonobu\/","title":{"rendered":"What kind of place is Uonobu?"},"content":{"rendered":"<p class=\"p1\">Nice to meet you.<\/p>\n<p class=\"p1\">My name is Koichi Nishida, the representative of <span class=\"s1\"><b>Ajino Shukaijo Uonobu Co., Ltd.<\/b><b><\/b><\/span><\/p>\n<p class=\"p1\">As the second-generation owner of Uonobu, a restaurant founded by my parents, I serve the people of our local community every day.<\/p>\n<p class=\"p1\">About four years ago, we welcomed <i>Harada Tofu<\/i>, a tofu maker with over 80 years of history, onto our property, and I have taken over the business as the fourth-generation <i>Harada Tofu<\/i> craftsman.<\/p>\n<p class=\"p1\">The history of Uonobu began in May 1967, when my mother, Nobuko, opened a 4-tsubo (about 13\u33a1) fresh fish store in the corner of a supermarket in Iwazu-cho, Okazaki City.<\/p>\n<p class=\"p1\">The name \u201cUonobu\u201d comes from my mother\u2019s name, <i>Nobuko<\/i>, the founder.<\/p>\n<p class=\"p1\">In fact, I was born on April 26, 1967 \u2014 just one week before the opening of Uonobu.<\/p>\n<p class=\"p1\">So, my age and the number of years Uonobu has been in business are exactly the same.<\/p>\n<p class=\"p1\">My mother didn\u2019t just run a fish shop; she also turned the second floor of our home into a traditional tatami room and offered meals.<\/p>\n<p class=\"p1\">Looking back, I realize how innovative it was to create delicious dishes using the fresh fish she sourced \u2014 ensuring nothing went to waste.<\/p>\n<p class=\"p1\">In 1985, we closed the fish shop and opened the current <span class=\"s1\"><b>Ajino Shukaijo Uonobu<\/b><\/span> in Inaguma-cho, a banquet hall capable of hosting up to 150 guests.<\/p>\n<p class=\"p1\">There was a clear reason why my parents established such a large-scale restaurant.<\/p>\n<p class=\"p1\">They didn\u2019t want it to be just a place to satisfy hunger \u2014 but a warm, welcoming space where people could gather, smile, and enjoy meals together.<\/p>\n<p class=\"p1\">What they valued most was not large-scale parties, but intimate family gatherings.<\/p>\n<p class=\"p1\">Whether celebrating the growth of a beloved child, honoring the longevity of parents, or simply enjoying a family meal \u2014 they wanted Uonobu to be a destination for those precious moments. That spirit lives on in the name <i>\u201cAjino Shukaijo\u201d<\/i>, meaning \u201cA Place to Gather Over Flavor.\u201d<\/p>\n<p class=\"p1\">Now, 58 years since its founding and 40 years as a restaurant, the food industry has evolved with the times.<\/p>\n<p class=\"p1\">But thanks to the ongoing support of our local community, we continue to thrive \u2014 a testament to my mother\u2019s curiosity, courage, and action.<\/p>\n<p class=\"p1\">At the heart of everything is our deep desire to bring joy to our customers.<\/p>\n<p class=\"p1\">Uonobu\u2019s cuisine is rooted in our origins as a fishmonger.<\/p>\n<p class=\"p1\">We use only the freshest seafood and prepare each dish with care and dedication \u2014 a true expression of the founder\u2019s personality and passion.<\/p>\n<p class=\"p1\">My mother, Nobuko, passed peacefully last year at the age of 81.<\/p>\n<p class=\"p1\">But we will continue to honor the traditional Japanese culinary culture centered around fish that she cherished.<\/p>\n<p class=\"p1\">Now, the third generation, whom she raised with love, is pursuing his path as the manager of \u201cUonobu Shokudo\u201d in Idashin-machi.<\/p>\n<p class=\"p1\">The Uonobu story continues \u2014 together with the people of our region.<\/p>\n<!--CusAds0-->\n<div style=\"font-size: 0px; height: 0px; line-height: 0px; margin: 0; padding: 0; clear: both;\"><\/div>","protected":false},"excerpt":{"rendered":"<p>Nice to meet you.
